Origin Story: Brazil Santos — The Coffee That Converted a Generation

Discover the story behind our Brazil Santos — a timeless, sun-dried single origin from the São Paulo highlands, with smooth dark chocolate, roasted almond, and a full, silky body.

Some coffees are discoveries. Brazil Santos is a homecoming. It's the coffee that introduced millions of people to the idea that a cup could be smooth, satisfying, and genuinely delicious — without demanding anything of the drinker. Timeless, comforting, and never disappointing.

The Port That Named a Coffee

Santos coffee takes its name from the historic Port of Santos on the São Paulo coast — for over a century, the gateway through which Brazilian coffee reached the world. The name became synonymous with quality and consistency, and it still carries that weight today.

Our beans come from the highlands of São Paulo and the adjoining state of Minas Gerais, where small family farms have worked the same rolling, red-soiled hillsides for generations. This is coffee country in the truest sense — a landscape shaped by the crop, and communities built around it.

Highland Growing, Sun-Dried Character

Sitting between 800 and 1,350 metres above sea level, the cherries ripen slowly in the cool highland air, developing a naturally mild, balanced sweetness. The altitude isn't as extreme as some East African or Colombian origins, but it's precisely this moderate elevation that gives Santos its approachable, crowd-pleasing character.

Farmers here use traditional sun-drying methods, laying cherries on raised beds to dry gradually in the Brazilian sunshine. This natural process preserves the bean's inherent smoothness and low acidity — the hallmarks of a great Santos coffee.

What's in the Cup

Brazil Santos is the definition of a crowd-pleaser — but don't mistake approachability for simplicity:

  • Aroma: Roasted almonds with warm, honey-like undertones
  • Flavour: Smooth dark chocolate with a gentle, lingering nuttiness
  • Body: Full and silky, with a satisfying weight in the cup
  • Acidity: Mellow and approachable — easy on the palate
  • Finish: Bold, nutty, and long-lasting

How to Brew It

Santos shines as an espresso or cafétière, where its full body and low acidity really come into their own. The low acidity makes it particularly forgiving — it's hard to over-extract, which makes it a great choice for home brewers still finding their feet.

It's also excellent as a morning filter for a smooth, no-fuss start to the day. And if you're making milk-based drinks — flat whites, lattes, cappuccinos — Santos holds its own beautifully against steamed milk.
